Today is sunday and we’re buried in snow. So, I started a cozy fire and I don’t think we’re going anywhere! Always makes me feel like cooking.
Its almost time for lunch and I’m going to wing it and just use what I have on hand to make some soup.
Here’s what I found:
Frozen, left-over pot roast and caramelized onions, cannellini beans, tomatoes, some cabbage, pasta, parmigiano-reggiano, and a little chicken broth.
Where to begin…
First thing is to throw the frozen caramelized onions and the meat into the pot to reheat it.
Next, toss in the chopped cabbage with a little salt and put a lid on the pot, stirring occasionally until it softens.
And looks like this.
The cabbage should be tasty at this point. If it tastes bland, add some salt! A little salt fixes everything!
Next, I’ll add some diced tomatoes and the cannellini beans.
And then some chicken broth.
Now, I’ll let that simmer while I make a little pasta to add to the soup later.
Finish with a little parmigiano-reggiano and Voila!…Delicious soup in record time. What could be better!
- Leftover pot roast or any type of beef

- Add the beef
- Add the cabbage and put a lid on the pot so that the cabbage wilts
- Add chicken broth
- Next add the cannellini beans and tomatoes
- Finish with parmigiano-reggiano
- Serve with Pasta and more parmigiano-reggiano
