Back in the Day:
I started making Chicken Salad back in my college days. Back in the day, I used the chicken I had leftover from making a batch of chicken soup. I’d throw some chicken salad together and serve it on hot biscuits. It was awesome! This week, when my good friend asked me for a chicken salad recipe, this recipe was my first thought. I text her my recipe and have been craving it ever since. Had to make some for myself!
Versatile Recipe: Add whatever you like
This versatile recipe can be easily altered to suit your tastes. We have tried it with and without celery and grapes and chose this version with red grapes hands down. Other ideas: Walnuts, honey roasted pecans.
Work with the chicken while it is still warm and can easily be deboned with a fork and the soft meat will combine easily with the other ingredients making a creamy Chicken Salad.

- Roast Chicken, hot and fresh from the grocery store, deboned and diced.
- ½ Shallot, finely diced.
- ½ Stalk Celery, finely diced.
- 10 Red Grapes, quartered.
- 1 Teaspoon Dijon Mustard
- 1 Cup Mayonnaise
- Salt and pepper to taste
- Mix all ingredients together until fully incorporated and creamy.
- Serve on hot biscuits or whatever bread you choose!
