This recipe was inspired by a recipe for a Kale and Mushroom Wrap that I saw in Giada de Laurentiis' beautifully photographed book, Giada's Feel Good Food. (73)
This recipe is like a salad in a wrap. So, you can really choose your favorite salad fixings and give it your own twist. I chose some of my favorites: swiss chard, Chihuahua cheese, and a squeeze of lemon to brighten up the flavors.
Some choices are better than others:
Swiss Chard is a super healthy choice of leafy green. Did you know that it is ranked as one of the most nutritious Powerhouse Vegetables by the CDC? Listed above Kale, Dandelion Greens, and Broccoli, which I found surprising. Who knew?
Swiss Chard and Mushroom Wrap
This Swiss Chard and Mushroom Wrap is such a healthy meal option, but its super flavorful, too! It's got all the fresh, sweet and salty, flavors packed into one wrap! It's so good! So let's get started!
HERE'S WHAT YOU'LL NEED:
INGREDIENTS:
Swiss Chard and Mushroom Sauté:
- 1 Teaspoon Extra Virgin Olive Oil
- ¼ Cup Shallots, Minced
- 8 Ounces Baby Bella Mushrooms, Sliced
- ¼ Teaspoon Table Salt
- ⅛ Teaspoon Ground Black Pepper
- 4 Cups Swiss Chard, Chopped
- 1 Teaspoon Fresh Lemon Juice
Wrap:
- 2 Flour Tortillas
- ¼ Cup Shredded Chihuahua Cheese
This recipe is super easy to make. You just Sauté, then Wrap! Easy as that! So, let's get cooking!
INSTRUCTIONS:
SWISS CHARD AND MUSHROOM SAUTE:
Step 1: Sauté ¼ cup of minced Shallots in 1 teaspoon of Extra Virgin Olive Oil until just translucent. Season with ¼ teaspoon salt and ⅛ teaspoon ground black pepper.
Step 2: Add 8 ounces of sliced Baby Bella Mushrooms and sauté until browned and liquid from the mushrooms has evaporated.
Step 3: Add 4 cups of chopped Swiss Chard and sauté until wilted. Stir in 1 teaspoon fresh Lemon Juice.
WRAP:
Step 4: In a separate pan, warm two Flour Tortillas. Divide and melt the Shredded Chihuahua Cheese on the Flour Tortillas.
Step 5: Divide and serve the Swiss Chard and Mushroom sauté on top of the Flour Tortillas.
Serve immediately and enjoy!
