Swiss Chard and Mushroom Wrap

This recipe was inspired by a recipe for a Kale and Mushroom Wrap that I saw in Giada de Laurentiis' beautifully photographed book, Giada's Feel Good Food. (73)

Swiss Chard and Mushroom Sauté:

  • 1 Teaspoon Extra Virgin Olive Oil
  • 1/4 Cup Shallots, Minced
  • 8 Ounces Baby Bella Mushrooms, Sliced
  • 1/4 Teaspoon Table Salt
  • 1/8 Teaspoon Ground Black Pepper
  • 4 Cups Swiss Chard, Chopped
  • 1 Teaspoon Fresh Lemon Juice


  • 2 Flour Tortillas
  • 1/4 Cup Shredded Chihuahua Cheese


Swiss Chard and Mushroom Sauté:

Step 1:  Sauté 1/4 cup of minced Shallots in 1 teaspoon of Extra Virgin Olive Oil until just translucent.  Season with 1/4 teaspoon salt and 1/8 teaspoon ground black pepper.

Step 2:  Add 8 ounces of sliced Baby Bella Mushrooms and sauté until browned and liquid from the mushrooms has evaporated.

Step 3:  Add 4 cups of chopped Swiss Chard and sauté until wilted.  Stir in 1 teaspoon fresh Lemon Juice.


Step 4:  In a separate pan, warm two Flour Tortillas.  Divide and melt the Shredded Chihuahua Cheese on the Flour Tortillas.

Step 5:  Divide and serve the Swiss Chard and Mushroom Sauté on top of the Flour Tortillas.  Serve immediately and enjoy!


This recipe can be easily modified for diet and flavor preferences.  Try a healthier option and serve on corn tortillas, multi-grain wraps, or Ezekiel Bread.
