Preheat and Prep. Preheat oven to 350℉. Spray muffin pan with nonstick spray or use cupcake liners.
Make Batter. Cover the oats with warm water and soak for 5 minutes, then drain the oats and set aside. In a large bowl, sift together the almond flour, baking soda, cinnamon, salt, and nutmeg and set aside. In a small bowl, whisk together the eggs, extra virgin olive oil, honey, and vanilla, until combined. Add the wet ingredients to the dry ingredients and mix together. Add the oats and 4 cups of grated apples. Mix together until well-combined.
Bake. Scoop batter into greased non-stick muffin pan and bake at 350℉ for 25 minutes or until the tops of the muffins are set. Allow the muffins to cool for 10 minutes in the muffin pan before transferring them to a cooling rack.
