Meal Prep Tips for Quick Dinners
- German Spaghetti: Package leftovers into 4 single-serve containers and freeze - ready to reheat for quick solo dinners.
- Chicken Thighs: Salt them on the weekend. Serve with roasted potatoes or rice for easy sides. Or toss thighs in the crockpot with broth - chicken breasts or a cut-up whole chicken work too.
- Meatballs: Short on time? Skip rolling - form into a meatloaf and bake or crockpot instead.
- Pot Roast: Works beautifully in the crockpot (6 hrs on low). Skip the pasta, toss in red potatoes instead, or add store-bought tortellini at the end.
- Brats: Boil, grill, slice, and freeze on the weekend. Pull them out midweek for faster pasta night.
