What Is German Spaghetti?
German Spaghetti is a simple pasta dish made with ground beef, onions, celery, tomatoes, and butter simmered together into a savory sauce. Unlike traditional Italian spaghetti sauce, this version uses fewer herbs and focuses on the natural flavors of the beef and vegetables.
In my family, this recipe came from my German grandmother, Oma. It became one of those easy weeknight dinners that could be made quickly with basic ingredients but still tasted comforting and satisfying.
German Spaghetti vs Italian Spaghetti Sauce
German Spaghetti and Italian spaghetti sauce are both served over pasta, but the flavor profiles are quite different.
German Spaghetti
• Uses ground beef, onions, celery, tomatoes, and butter.
• Has a mild, savory flavor with fewer herbs.
• Butter is stirred in at the end to create a smooth, mellow sauce.
Italian Spaghetti Sauce
• Often includes garlic, olive oil, basil, oregano, and other herbs.
• Usually has a stronger tomato and herb flavor.
• Often simmers longer to develop deeper flavor.
The result is that German Spaghetti tastes simpler and more comforting, while Italian spaghetti sauce tends to be more herb-forward and tomato-driven.

Ingredients You'll Need

- Ground beef. Ground sirloin works well because it has less fat and produces a clean, savory sauce. Ground chuck or ground round can also be used, but excess grease should be drained if needed.
- Onion. A diced yellow onion adds sweetness and depth to the base of the sauce as it cooks with the beef.
- Celery. Celery adds subtle flavor and texture, which is part of what makes this German Spaghetti recipe different from traditional Italian-style spaghetti sauce.
- Diced tomatoes. Canned diced tomatoes packed in juice work best for this recipe because they keep the sauce light and slightly chunky.
- Butter. Butter is stirred in at the end of cooking to soften the acidity of the tomatoes and give the sauce its smooth, mellow flavor.
- Spaghetti. Classic spaghetti noodles are the traditional way to serve this savory meat sauce.
- Salt and black pepper. Simple seasoning helps bring out the natural flavors of the beef and vegetables.

Substitutions & Add-Ins
- Parmesan cheese. A light grating of Parmesan cheese adds a salty finish that pairs nicely with the savory sauce.
- Ground turkey instead of ground beef. Ground turkey creates a lighter version of the sauce while still providing good flavor.
- Ground bison instead of ground beef. Ground bison produces a slightly richer flavor and is a great option if you prefer lean red meat.
- Fresh tomatoes instead of canned tomatoes. Two or three chopped fresh tomatoes can be used in place of canned diced tomatoes when they are in season.
- Parsley for garnish. Fresh chopped parsley adds a bright, fresh flavor when sprinkled over the finished pasta.

Variations
- Classic Oma's version. Follow the recipe exactly using ground beef, diced tomatoes, celery, and butter for the traditional family version.
- Italian-style version. Using tomato sauce instead of diced tomatoes creates a smoother sauce that tastes closer to a traditional Italian red sauce. Adding a pinch of Homemade Italian Seasoning also brings more classic Italian herb flavor to the dish.
- Hearty meat sauce version. Add an extra half pound of ground beef for a thicker, meatier sauce.
- Vegetable-rich version. Add diced carrots or mushrooms along with the celery for extra vegetables and flavor.
How To Make Oma's Easy German Spaghetti

Step 1. Sweat the Onions. Melt 1 tablespoon of butter in a large skillet over low heat. Add the diced onion and cook gently until the onion becomes soft and translucent.
Avoid browning the onions. The goal is to soften them so they blend smoothly into the sauce.

Step 2. Brown the Ground Beef. Increase the heat to medium-high and add the ground beef along with salt and black pepper. Cook while breaking up the meat until it is fully browned and mixed with the onions.
Taste the meat mixture and adjust the seasoning if needed. Seasoning the meat at this stage builds the flavor base of the sauce.

Step 3. Add tomatoes and celery. Stir in the diced tomatoes and chopped celery. Reduce the heat to medium-low, cover the pan, and let the sauce simmer.
Cook for about 15 to 20 minutes, or until the celery becomes tender and the flavors have blended.

Step 4. Finish the sauce with butter. Turn off the heat and stir in the remaining butter until it melts completely into the sauce.
This step gives the sauce its signature smooth texture and helps mellow the acidity of the tomatoes.
Here is a helpful article from The Spruce Eats about Finishing Sauces with Butter.

Step 5. Serve. Serve the sauce over cooked spaghetti. Garnish with chopped parsley and freshly grated Parmesan cheese if desired.
Expert Tips
- Cook the onions gently instead of browning them. Sweating the onions over low heat softens them without caramelizing, which keeps the sauce mild and balanced rather than sweet or overly browned.
- Season the beef while it cooks. Adding salt and pepper as the ground beef browns builds flavor early and creates a more savory sauce.
- Simmer until the celery is completely tender. The celery should soften fully during the simmer so the finished sauce has the correct texture and the vegetables blend smoothly into the sauce.
- Finish the sauce with butter off the heat. Stirring in butter at the end melts it gently into the tomatoes and gives the sauce its smooth, mellow flavor.
- Salt the pasta water well. Properly salted pasta water seasons the spaghetti itself, which improves the overall flavor of the finished dish.
Troubleshooting Guide
- Sauce tastes too acidic. Stir in a small additional piece of butter to mellow the tomato flavor.
- Sauce seems watery. Let the sauce simmer uncovered for a few minutes so some of the liquid can evaporate.
- Celery is still crunchy. Continue simmering the sauce until the celery becomes fully tender.
- Sauce tastes flat. Add a pinch of salt and taste again. Proper seasoning brings the flavors together.
Storage & Make-Ahead Tips
- Make-Ahead: The sauce can be prepared up to 2 days in advance and stored in the refrigerator until ready to serve.
- Refrigerate: Store leftover German Spaghetti sauce in an airtight container in the refrigerator for up to 4 days.
- Freeze: The meat sauce freezes well. Let the sauce cool completely, then store it in a freezer-safe container for up to 3 months.
- Reheat: Reheat the sauce gently on the stovetop over medium-low heat until warmed through. Add a small splash of water if the sauce has thickened too much.

Sherry says
Seanna, could I add veggies like maybe spinach to this & when should I add it?
Seanna Borrows says
Hi Sherry, More veggies are always a good thing! I'd add spinach in at the end so that it just wilts. Add firmer vegetables like carrots or zucchini in with the onions so they have time to soften. Thanks for your question! So nice hearing from you! ~Seanna
