Peanut Butter Protein Bar shown with Oats and Flax Meal on a white plate

Peanut Butter Protein Bars - Super healthy snack made with Peanut Butter, Steel Cut Oats, Flax Meal and Honey. So Good!

Peanut Butter Protein Bars are a chocolate-free twist on another yummy recipe, Chocolate Peanut Butter Protein Balls.

Ready to make this super tasty snack, super fast?  We'll show you how.  Here's what you'll need:

    INGREDIENTS:

    • 1 Cup Organic Steel Cut Oats
    • 1 Cup Protein Powder
    • 1 Cup Organic Peanut Butter
    • ½ Cup Organic Flax Meal
    • ½ Cup Organic Honey
    • 1 Teaspoon Vanilla

    EQUIPMENT:

    • Food Processor
    • Rubber Spatula
    • Measuring Cups for dry ingredients
    • Measuring Spoons
    • Baker's Quarter Sheet
    • Parchment Paper - 2 sheets

    INSTRUCTIONS:

    Step 1:  Make the Dough

Place all ingredients into a food processor and pulse until smooth.

Step 2:  Roll out the Dough

Line baker's sheet with parchment paper and dump dough out onto the paper.  Then, place another sheet of parchment paper over the top and press the dough out flat.  I use a little rolling pin or a tin can to do this.

Dough pressed flat in between two sheets of parchment paper with rolling pin on top

Step 3:  Cut the Dough into Bars

Make sure the dough is shaped into a neat, straight edged rectangle.  Cut the dough cross-wise into 4 quarters.  Score the top with marks to divide each quarter into 3 bars.

Once the dough is scored, make straight-lined cuts dividing the dough into 12 bars.

    Step 4:  Package them up!

One by one, individually wrap each bar in plastic wrap and store in a ziploc bag.

    STORAGE SUGGESTION:

Peanut Butter Protein Bars are best stored in the freezer.  Just toss the bag into the freezer and one take out to eat whenever you get the craving.  My husband likes to take one to work with him every day for a late afternoon snack.  So, I always have some on hand in the freezer!
