All you need to make these gluten-free apple muffins are a few simple ingredients from the grocery store. For best results, there are a few important notes on ingredients you should keep in mind.
- gluten-free rolled oats - Soak the dry oats in warm water. Press the oats into a strainer to squeeze out any remaining water. Make sure that you drain them well so that the batter doesn't get too wet.
- apples - Grated. You may substitute diced or chopped apples. Make sure to drain the apples so that the batter doesn't get too wet. The best way to do this is to roll them in a piece of parchment paper and squeeze the juice out of them.

- Extra Virgin Olive Oil - May substitute another type of cooking oil like, avocado oil, melted coconut oil, or vegetable oil.
How to Make Apple Muffins
- Preheat and Prep. Preheat oven to 350℉. Spray a muffin pan with nonstick spray or use paper liners.
- Soak and Drain Oats. Cover the oats with warm water and soak for 5 minutes, then drain them and set aside.

- Combine Dry Ingredients. In a large bowl, sift together almond flour, baking soda, cinnamon, salt, and ground nutmeg, and set the flour mixture aside.

- Combine Wet Ingredients. In a small bowl, whisk together the eggs, extra virgin olive oil, honey, and vanilla, until combined.

- Combine Dry and Wet Ingredients. Add the wet ingredients to the dry ingredients and mix well.
Then add the oats and 4 cups of grated apples (drained). Mix it all together with an electric mixer.Press into patties on the tray

- Bake Muffins. Scoop the muffin batter into the prepared muffin pan
Bake at 350℉ for 25 minutes or until the tops of the muffins are set.
Allow the apple muffins to cool for 10 minutes in the muffin pan before transferring them to a cooling rack.

I'm disappointed in these muffins! I made exactly as directed, having never made them before. Took about 12-14 minutes longer to bake than noted in recipe. The taste was nonexistent, very flat. Muffins didn't rise much at all. If I make again, I would increase the cinnamon and substitute oil for butter. I also wouldn't soak the oats before using as I found the batter wet; I would just add as-is to the recipe (like for oatmeal cookies). If I make again with these tweaks, I'll let ya know how it worked out. I'm gluten-free due to allergies and had high hopes for this recipe.
