    In our family, these are known as Uncle Joe's Cheesy Potatoes and are everybody's favorite. It's a great recipe that pairs well with just about every meal, especially our Oven Baked BBQ Ribs.

    Easy Cheesy Hashbrown Casserole Recipe

    Cheesy Hash Brown Casserole is a great side dish recipe made from simple ingredients. Thanks to a couple of short cuts, it takes just 15 minutes to throw together and can be ready to eat in about an hour.

    Easier to make that traditional au gratin potatoes, because it's made with hash brown potatoes, and cream of chicken soup. There are no potatoes to peel and prepare, and no cheese sauce to make.

    • frozen hash browns - You'll find these in the freezer section of your local grocery store.

      Pro Tip - Be sure to thaw them on the kitchen counter for 30 minutes before you use them.

      Substitution Suggestion - This easy recipe works with all types of frozen or fresh potatoes, including sweet potatoes.
      Thicker cut potatoes will alter the cooking time.  So, try to stick with a smaller diced or thinly sliced potato.
    • onions - We like to use ¼ cup of minced onions, but you can add up to 1 cup.
    • cream of chicken soup - May substitute cream of celery soup.
    • sour cream
    • melted butter - May substitute margarine for butter.
    • sharp cheddar cheese
    • salt & pepper
    • potato chips - May substitute corn flakes for potato chips.

    How to Make Cheesy Hashbrown Casserole

    Pre-Heat Oven to 375°F.

    Mix Ingredients. Place all ingredients in a large bowl and mix to combine.

    Spread in Baking Dish. Put into 9 x 13 baking dish and spread out evenly.

    Topping. Top with crushed potato chips or corn flakes.

    Bake. Bake at 375°F for 1 hour.

    Should I thaw hash browns before cooking?

    For best results, thaw hash browns before cooking them. Only thaw them for 30 minutes if making Cheesy Hash Brown Casserole.

    Can I use fresh potatoes instead of frozen hash browns for this recipe?

    Absolutely. Any type of potato will work. However, we do recommend dicing or shredding the potatoes so that the cooking time will be the same. Otherwise, adjust the cooking time appropriately so that the potatoes are soft and cooked all the way through.

    Can I make Cheesy Hash Brown Casserole in the Crock Pot?

    Yes. Just mix all the ingredients together, put them into a crock pot or slow cooker on high for 4 hours, until the cheese has melted and potatoes are soft.

    Make Ahead Instructions - Make this cheesy casserole ahead of time for holiday dinners or easy meal prep.

    Bake it now or bake it later. Either way, just cover the baking dish with plastic wrap or put it in an airtight container. Store in the refrigerator for 3-5 days or in the freezer until you are ready to reheat.

    Reheating Instructions - The best way to reheat these cheesy potatoes is to bring it up to room temperature and then bake or reheat it in the oven.

    • ¼ cup onions minced.
    • 1 can cream of chicken soup
    • 1 pint sour cream
    • 1 stick butter melted.
    • 8 ounces cheddar cheese sharp.
    • 1 teaspoon salt
    • ¼ teaspoon pepper
    • 1 cup potato chips crushed.
