Here's What You Need

Grilled Chicken Ingredients
- boneless, skinless chicken breasts - fresh and dried off with a paper towel.
- extra virgin olive oil - or any neutral cooking oil.
- salt and ground black pepper
Toasted Breadcrumbs Ingredients
- extra virgin olive oil - cooking oil will bring down the cooking temperature and prevent the butter from burning.
- salted butter - gives the toasted breadcrumbs a savory, nutty flavor.
- Panko breadcrumbs - Japanese Panko breadcrumbs have a larger crumb and tend not to soak up oil as easily as regular breadcrumbs.

Tortelloni Alfredo
- 5 cheese tortelloni - Tortelloni is just a larger version of cheese tortellini. They taste the same.
- salt for boiling water
- salted butter
- heavy whipping cream (heavy cream)
- grated parmesan cheese (Parmigiano-Reggiano)
- salt
- ground black pepper - just a little will do.
- ground nutmeg - freshly grated nutmeg will bring the best flavor to the Alfredo Sauce.

Topping
- shredded Asiago cheese - freshly grated Asiago is best. If the shredded Asiago cheese is dried out, as is often the case with pre-shredded cheeses, it will not melt very well and the flavor of the cheese will be dulled.

Substitutions
chicken thighs - tender chicken that is juicy, and delicious. And they are a less expensive, cost saving chicken cut.
chicken tenderloins - tender and juicy chicken tenders.
pasta - Use any type of pasta shape you prefer like: cheese tortellini, ravioli, rotini, gemelli, or penne.
parmesan - Freshly grated parmesan cheese found at any grocery store deli section may be used instead of Parmigiano-Reggiano. Pecorino or Romano cheese are also good substitutes for parmesan cheese.

How to Make Olive Garden Tortellini Alfredo
You can make this tasty copycat Olive Garden Asiago Tortelloni with Grilled Chicken recipe with some fresh chicken and a few pantry staples. We'll show you how.
Grill The Chicken
1. Grill Chicken. Rub olive oil on 4 chicken breasts that have been cut or pounded to an even thickness and season them with salt and pepper on each side. Grill chicken on a grill or in a large skillet for 5-6 minutes on each side to an internal temperature of 165°F. Place chicken on a plate to rest for 5 minutes before slicing. Then slice the chicken into strips or bite sized pieces. Set aside.

Make the Bread Crumb Topping
2. Toast Bread Crumbs. Heat 1 tablespoon of extra virgin olive oil in a pan over medium-high heat until it is very hot. Add breadcrumbs to the hot oil and sauté until golden brown, approximately 3-4 minutes. Transfer the toasted breadcrumbs from the pan a plate lined with paper towels to drain off any excess oil. Set the breadcrumb mixture aside.

Cook The Pasta
3. Make Tortelloni Pasta. Bring 5 quarts of water to a boil in a large pot. Add 2 tablespoons of salt to the boiling water. Then add Tortelloni to the water. Cook tortelloni according to package directions. As the pasta is cooking, start the sauce. When the tortelloni is done cooking, reserve 1 cup of the salty water and drain the rest. Set both water and cooked tortelloni aside.
Make The Sauce
4. Make the Alfredo Sauce. Place cold butter and heavy cream in a medium sauce pan. Bring cream and butter up to a boil over medium heat. Stirring continuously, boil the cream and butter for 1 minute or until sauce has thickened a little bit.
Turn off the heat and the grated Parmigiano-Reggiano cheese, salt, ground pepper, and ground nutmeg. Stir together until the cheese has melted and becomes a smooth and creamy Alfredo sauce.
Use a little of the reserved pasta water to thin out the Alfredo Sauce if it is too thick.

Toss Together and Bake
5. Toss in the Cooked Tortelloni. Add the reserved cooked tortelloni.

6. Prepare Dish for Oven. Tortelloni Alfredo Layer: Place the Tortelloni Alfredo in the bottom of a large baking dish or portioned out into individual baking dishes. Grilled Chicken Layer: Put a layer of sliced grilled chicken over the tortelloni layer. Asiago Layer: Sprinkle grated Asiago cheese over the top of the tortelloni and grilled chicken. Breadcrumb Layer: Sprinkle toasted breadcrumbs over the top. The crispy panko breadcrumbs add a little texture that compliments the smooth alfredo sauce.

7. Bake. Bake at 400°F for 15 minutes or until cheese is melted.

Tasty Tips
Double the Alfredo Sauce ingredients (but don't add extra tortelloni) to make it extra creamy and saucy.
Avoid Processed Parmesan - Do not use the processed "parmesan" that is found on the grocery store shelf. Processed parmesan won't melt into a smooth sauce, but will remain grainy in texture.

Olive Garden Asiago Tortelloni Alfredo with Grilled Chicken Recipe

Grilled Chicken Ingredients:
- 4 boneless skinless chicken breasts
- 1 tablespoon extra virgin olive oil

Toasted Breadcrumbs Ingredients:
- 1 tablespoon extra virgin olive oil
- 1 tablespoon salted butter
- 1 cup Panko breadcrumbs
Tortelloni Alfredo:
- 1 20 oz package - 5 cheese tricolor tortelloni
- ¼ cup salt for boiling water
- 3 tablespoons salted butter
- 1 cup heavy cream
- 1.5 cup grated Parmigiano-Reggiano
- 1 teaspoon salt
- ⅛ teaspoon ground nutmeg
- ¼ teaspoon ground pepper
Topping:
- 1 cup shredded Asiago cheese
Instructions
- Grill Chicken. Pre-heat oven to 400°F. Rub olive oil on 4 chicken breasts and season with salt and pepper on each side. Grill chicken for 5-6 minutes on each side to an internal temperature of 165°F. Let grilled chicken rest for 5 minutes before slicing. Then slice the chicken into strips or bite sized pieces. - Toss in the Cooked Tortelloni. Add the reserved cooked tortelloni.
- Assemble Dish for Oven.Tortelloni Alfredo Layer. Place the Tortelloni Alfredo in the bottom of a large baking dish or portioned out into individual baking dishes. Grilled Chicken Layer. Put a layer of sliced grilled chicken over the tortelloni layer. Asiago Layer. Sprinkle grated Asiago cheese over the top of the tortelloni and grilled chicken. Breadcrumb Layer. Sprinkle toasted breadcrumbs over the top.
- Bake. Bake at 400°F for 5-10 minutes or until cheese is melted.
